2 cups of roasted Hatch green chilies, peeled and chopped

2 cups of pumpkin puree (canned or homemade)

1 medium onion, diced

4 cloves of garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a non-vegan option)

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro or pumpkin seeds for garnishing

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion is translucent, about 5-7 minutes.
