6 large eggs

1/2 cup milk (or your favorite non-dairy alternative)

1 cup cooked and crumbled breakfast sausage (or plant-based sausage)

1 cup shredded cheddar cheese

1 cup diced hatch green chilies (canned or fresh, roasted and peeled)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped onion

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

Fresh cilantro or green onions for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with non-stick spray or line with muffin liners for easy removal.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt, pepper, garlic powder, and paprika.
