Hatch Chili Chicken Queso Bake

1 lb boneless, skinless chicken breast, diced

2 cups fresh Hatch green chiles (or canned, if needed), diced

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese (divided)

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup chopped fresh cilantro (for garnish)

Tortilla chips or sliced veggies (for serving)

Instructions
 

Preheat the oven to 350°F (175°C).

    Cook the chicken: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced chicken with garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 8-10 minutes. Remove from heat and set aside.

      Prepare the cheese mixture: In a large mixing bowl, combine softened cream cheese and sour cream. Mix until smooth and creamy.

        Combine ingredients: Stir in the cooked chicken, diced Hatch green chiles, and 1/2 cup of shredded cheddar cheese and all the Monterey Jack cheese into the cream cheese mixture. Mix until well combined.
