Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

3 (8 oz) packages cream cheese, softened

1 cup brown sugar

1 cup heavy cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon butterscotch syrup

½ teaspoon butter extract

Pinch of salt

Whipped cream (for topping)

Butterscotch sauce (for drizzling)

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool.

Make the Filling: In a large bowl, beat the softened cream cheese and brown sugar together until creamy and smooth.

Add Remaining Ingredients: Add in the heavy cream, eggs, vanilla extract, butterscotch syrup, butter extract, and salt. Mix on low speed until fully incorporated.

Bake the Cheesecake: Pour the filling over the cooled crust in the springform pan. Tap gently to remove air bubbles. Bake at 325°F (160°C) for 55-60 minutes or until the center is slightly jiggly but set.

Cooling Time: Turn off the oven and crack the door slightly. Let the cheesecake cool in the oven for 1 hour to prevent cracking. Then, refrigerate for at least 4 hours or overnight for best results.

Serve: Before serving, top with whipped cream and drizzle with butterscotch sauce. Slice and enjoy your enchanting butterbeer cheesecake!
