2 large chicken breasts

2 tablespoons harissa paste

1 tablespoon olive oil

Salt and pepper to taste

4 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/3 cup crumbled feta cheese

1/4 cup olives (Kalamata or green), pitted and sliced

1/4 cup fresh parsley, chopped

Juice of 1 lemon

1 tablespoon balsamic vinegar

Instructions
 

Marinate the Chicken: In a bowl, combine the harissa paste, olive oil, salt, and pepper. Coat the chicken breasts with the mixture and let them marinate for at least 30 minutes to allow the flavors to meld.

    Cook the Chicken: Preheat your grill or stovetop grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes.
