2 cups all-purpose flour

1 teaspoon instant yeast

1 teaspoon sugar

½ teaspoon salt

¾ cup warm water (about 110°F)

1 tablespoon olive oil

1 cup cooked ham, diced

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

1 tablespoon Dijon mustard (optional)

1 egg (for egg wash)

Extra flour for dusting

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.

      - Make a well in the center and add the warm water and olive oil. Stir until the dough starts to come together.

        - Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. If the dough sticks, add a little more flour as needed.

          Let the Dough Rise:

            - Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Prepare the Filling:

                - In a bowl, mix the diced ham, cheddar cheese, mozzarella cheese, and Dijon mustard (if using). Set aside.

                  Form the Calzones:

                    - Preheat your oven to 400°F (200°C).

                      - After the dough has risen, punch it down and divide it into four equal pieces.

                        - Roll each piece into a circle, about 6-8 inches in diameter, on a floured surface.

                          - Place a generous amount of the ham and cheese filling on one half of each dough circle, leaving a small border around the edge.

                            Seal the Calzones:

                              - Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal, and then crimp the edges with a fork to ensure no filling escapes.

                                Egg Wash:
