2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 tsp vanilla extract

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp salt

1/4 cup dark chocolate chips (or cacao nibs for a healthier option)

1/4 cup chopped nuts (walnuts or pecans)

Optional: 1/4 cup shredded coconut

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) if you plan to toast your oats for added flavor. This step is optional, but recommended for a nutty taste!

    Prepare the Oats: If toasting, spread the rolled oats on a baking sheet and bake for 10 minutes, stirring halfway through. Let cool before mixing.

      Mix Ingredients: In a large bowl, combine the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Stir until well combined.

        Add Dry Ingredients: In the same bowl, add the toasted (or raw) oats, baking soda, ground cinnamon, and salt. Mix until all ingredients are evenly distributed.

          Incorporate Add-ins: Fold in the dark chocolate chips, chopped nuts, and shredded coconut (if using) until they are well mixed within the batter.

            Form Energy Bites: Using your hands or a spoon, scoop out small portions of the mixture, about 1 inch in diameter, and roll into balls. Place them on a parchment-lined baking sheet.

              Chill: Optional but recommended! For a firmer texture, refrigerate the energy bites for at least 30 minutes.

                Store: Once chilled, transfer the energy bites to an airtight container and keep them in the fridge for up to a week — or freeze for later use!
