Grilled Veggie & Mozzarella Sandwiches

1 medium zucchini, sliced into thin rounds

1 bell pepper (any color), sliced into strips

1 small eggplant, sliced into thin rounds

1 medium red onion, sliced into rings

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon Italian seasoning (or dried oregano)

4 slices of rustic bread (like ciabatta or sourdough)

8 oz fresh mozzarella cheese, sliced

Fresh basil leaves, for garnish

Balsamic glaze (optional, for drizzling)

Instructions
 

Preheat Your Grill: Heat your grill (or grill pan) to medium-high heat. If using a grill pan, heat it on the stovetop.

    Prepare the Vegetables: In a large bowl, combine the zucchini, bell pepper, eggplant, and onion. Drizzle with olive oil, season with salt, pepper, and Italian seasoning. Toss until the veggies are evenly coated.

      Grill the Vegetables: Place the vegetables on the grill, in a single layer. Grill for about 4-5 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.

        Assemble the Sandwiches: Lay out two slices of the rustic bread on a clean surface. On each slice, layer the grilled vegetables and mozzarella slices. Top with a few fresh basil leaves.

          Top the Sandwiches: Place the remaining slices of bread on top of the cheese and veggies to form two sandwiches.

            Grill the Sandwiches: Lightly brush each sandwich with olive oil on both sides. Place them on the grill (or grill pan) and grill for about 3-4 minutes per side, or until the bread is toasted and the cheese melts nicely.

              Serve: Remove the sandwiches from the grill. Allow them to cool for a minute, then cut in half. Drizzle with balsamic glaze if desired, and enjoy your delicious grilled veggie & mozzarella sandwiches warm!
