Grilled Peach Chicken

4 boneless, skinless chicken breasts

2 ripe peaches, halved and pitted

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon paprika

Salt and pepper, to taste

Fresh basil, for garnish (optional)

Instructions
 

Prepare the Marinade:

    In a mixing bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, thyme, paprika, salt, and pepper until well combined.

      Marinate the Chicken:

        Place the chicken breasts in a large ziplock bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.

          Preheat the Grill:

            Preheat your grill to medium-high heat (about 400°F or 200°C).

              Prepare the Peaches:

                While the grill is heating, lightly brush the peach halves with olive oil and season with a pinch of salt and pepper.

                  Grill the Chicken:

                    Remove the chicken from the marinade, allowing excess to drip off. Place the chicken on the hot grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).

                      Grill the Peaches:

                        In the last 5 minutes of cooking, place the peach halves cut-side down on the grill. Grill for about 3-4 minutes until caramelized and grill marks appear.

                          Assemble and Serve:

                            Once the chicken is cooked through and the peaches are caramelized, remove them from the grill. Serve the grilled chicken topped with grilled peaches. Garnish with fresh basil if desired.
