Grilled Peach & Burrata Salad – Sweet & Savory Perfection!

4 ripe peaches, halved and pitted

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt, to taste

Black pepper, to taste

8 oz burrata cheese, room temperature

4 cups arugula or baby spinach

1/4 cup toasted walnuts or pecans

1/4 cup fresh basil leaves, torn

1 tablespoon honey (optional, for drizzling)

Instructions
 

Preheat your grill or grill pan to medium-high heat.

    Brush the cut sides of the peach halves with olive oil and season with salt and black pepper.

      Place the peaches cut-side down on the grill and grill for about 3-4 minutes until grill marks form and they are slightly softened. Remove from the grill and set aside.

        In a small bowl, whisk together the remaining olive oil and balsamic vinegar. Adjust seasoning with salt and pepper to taste.

          In a large bowl, toss the arugula (or spinach) with the dressing, ensuring all leaves are lightly coated.

            Arrange the dressed greens on a large serving platter.

              Tear the burrata into large pieces and place them on top of the greens, then add the grilled peaches, cut sides facing up.

                Scatter the toasted walnuts (or pecans) and torn basil leaves over the top.

                  If desired, drizzle honey over the salad for an extra touch of sweetness.

                    Serve immediately and enjoy this delightful balance of sweet and savory flavors!
