Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

Juice of 2 large lemons

Zest of 1 lemon

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Optional: lemon slices for grilling and garnish

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, parsley, salt, and pepper. Add the chicken breasts to the bowl, ensuring they are well-coated with the marinade. Cover and refrigerate for at least 30 minutes (up to 8 hours for better flavor).

Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, prepare a two-zone setup for direct and indirect heat.

Prepare the Grill Rack: Lightly oil the grill grates to prevent the chicken from sticking.

Grill the Chicken: Remove the chicken from the marinade (discard the remaining marinade) and place the chicken breasts on the hot grill. Grill for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the outside has nice grill marks.

Optional Lemon Slices: For added flavor, place lemon slices on the grill while the chicken is cooking, allowing them to caramelize slightly. These can serve as a beautiful garnish.

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing. This helps to retain the juices.

Serve: Slice the grilled chicken and garnish with fresh herbs or grilled lemon slices. Pair it with a side salad, grilled vegetables, or rice for a complete meal.
