4 slices of whole grain or sourdough bread

2 tablespoons cream cheese, softened

2 tablespoons ricotta cheese

1 tablespoon honey

1 teaspoon vanilla extract

1 medium banana, sliced

1 cup mixed berries (strawberries, blueberries, raspberries)

1 peach, sliced

2 tablespoons shredded coconut (optional)

2 tablespoons butter, softened

A pinch of cinnamon

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Cream Cheese Mixture: In a small bowl, combine the softened cream cheese, ricotta cheese, honey, and vanilla extract. Mix until smooth and well combined.

    Prepare the Bread: Take the slices of bread and spread the cream cheese mixture generously on one side of each slice.
