For the grilled corn & avocado salsa:

2 ears of fresh corn, husked

1 ripe avocado, diced

1 medium tomato, diced

1/4 red onion, finely chopped

1 jalapeño, seeds removed and finely diced (optional, for heat)

1 lime, juiced

2 tablespoons fresh cilantro, chopped

Salt and pepper, to taste

For the tacos:

8 small corn tortillas

1 cup crumbled feta cheese (optional)

1/2 cup sour cream or Greek yogurt (optional)

Lime wedges, for serving

Instructions
 

Grill the Corn:

    - Preheat your grill to medium-high heat. Place the husked corn directly on the grill grates.

      - Grill the corn for about 10-12 minutes, turning occasionally, until some charred spots appear and the kernels are tender. Remove from the grill and let it cool slightly.

        Prepare the Salsa:

          - Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob into a large bowl.

            - Add the diced avocado, tomato, red onion, jalapeño (if using), lime juice, and chopped cilantro to the bowl with corn.

              - Season with salt and pepper to taste. Gently stir to combine all ingredients while taking care not to mash the avocado too much.

                Warm the Tortillas:

                  - Heat a skillet over medium heat. Lightly toast each corn tortilla for about 30 seconds on each side until pliable and warmed through.

                    Assemble the Tacos:

                      - On each tortilla, add a generous scoop of the corn and avocado salsa. If desired, sprinkle with crumbled feta cheese and a dollop of sour cream or Greek yogurt.

                        Serve:
