Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

2 tablespoons red wine vinegar

1 tablespoon fresh lemon juice

2 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for heat)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, thyme, smoked paprika, sea salt, black pepper, and red pepper flakes (if using). Ensure the mixture is well combined.

Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the zesty marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4 hours or overnight for optimal flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). Make sure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Chicken: Remove the chicken from the marinade and allow any excess marinade to drip off. Discard the leftover marinade. Place the chicken breasts on the grill. Grill for 6-8 minutes per side, or until the chicken is cooked through (internal temperature should reach 165°F) and has nice grill marks.

Rest the Chicken: Once cooked, transfer the chicken to a plate and cover loosely with aluminum foil. Let it rest for 5 minutes to allow the juices to redistribute.

Serve: Slice the grilled chicken and garnish with chopped fresh parsley. Serve with lemon wedges on the side for an extra zest.
