Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

For the Peach BBQ Glaze:

2 ripe peaches, pitted and diced

1/2 cup ketchup

1/4 cup apple cider vinegar

1/4 cup brown sugar

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1/2 teaspoon chili powder

Salt and pepper, to taste

Optional: 1/4 teaspoon cayenne pepper for heat

Instructions

Marinate the Chicken: In a bowl, drizzle the chicken breasts with olive oil and season with salt, pepper, smoked paprika, garlic powder, and onion powder. Rub the spices all over the chicken and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours).

Make the Peach BBQ Glaze: In a saucepan over medium heat, combine the diced peaches, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper. If you like your glaze spicy, add cayenne pepper. Bring the mixture to a gentle simmer and cook for about 15 minutes until the peaches are soft and the glaze thickens, stirring occasionally.

Preheat the Grill: While the glaze is cooking, preheat your grill to medium-high heat (about 375°F to 400°F).

Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. In the last 2 minutes of grilling, brush a generous amount of the peach BBQ glaze onto the chicken to caramelize the sauce.

Serve: Once the chicken is cooked through, remove it from the grill and let it rest for 5 minutes. Slice the chicken and serve with additional peach BBQ glaze on the side. Pair with your favorite sides like grilled vegetables or a fresh salad.
