Ingredients

4 bone-in, skin-on chicken thighs

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons sriracha sauce (adjust for spice preference)

2 tablespoons rice vinegar

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Marinade: In a large mixing bowl, whisk together soy sauce, honey, sriracha, rice vinegar, minced garlic, grated ginger, smoked paprika, black pepper, and salt until well combined.

Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each thigh is well coated. Seal the bag (or cover the dish) and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F/200°C). Make sure the grates are clean and lightly oiled to prevent sticking.

Grill the Chicken: Remove the chicken thighs from the marinade, allowing excess marinade to drip off. Place the chicken skin-side down on the grill. Cook for about 6-8 minutes, then flip and cook for an additional 6-8 minutes or until the internal temperature reaches 165°F (75°C).

Rest the Chicken: Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving. This allows the juices to redistribute for a juicier bite.

Garnish and Serve: Sprinkle sliced green onions and sesame seeds over the grilled chicken thighs before serving. Pair with your favorite side dishes like grilled vegetables or rice for a complete meal.
