Grilled Chicken Skewers with Mango Salsa

For the Grilled Chicken Skewers:

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

Skewers (wooden or metal)

For the Mango Salsa:

1 ripe mango, diced

1 small red onion, finely chopped

1 small red bell pepper, diced

1 jalapeño, seeds removed and finely chopped (optional)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt and pepper, to taste

Instructions
 

Prepare Chicken Marinade:

    - In a bowl, mix olive oil, soy sauce, honey, garlic powder, smoked paprika, black pepper, and salt.

      - Add the chicken cubes to the marinade, ensuring they are well coated.

        - Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

          Make the Mango Salsa:

            - While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine diced mango, red onion, red bell pepper, jalapeño, lime juice, and cilantro.

              - Mix gently and season with salt and pepper. Let it sit for about 10-15 minutes to allow the flavors to meld together.

                Prepare the Skewers:

                  - If using wooden skewers, soak them in water for 30 minutes to prevent burning. If using metal skewers, you can skip this step.

                    - Preheat your grill to medium-high heat.

                      Skewer the Chicken:

                        - Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

                          Grill the Chicken:

                            - Once the grill is hot, place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through (internal temperature should reach 165°F/75°C and juices run clear).

                              Serve:

                                - Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with the fresh mango salsa on top or on the side.
