Grilled Chicken Pineapple Quesadillas

2 boneless, skinless chicken breasts

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

1 cup fresh pineapple, diced

1 cup shredded Monterey Jack cheese

1/2 cup cotija cheese, crumbled (optional)

1/4 cup fresh cilantro, chopped

4 large flour tortillas

Cooking spray or additional olive oil, for grilling

Optional: sour cream or salsa for serving

Instructions
 

Prepare the Chicken: In a small bowl, combine chili powder, cumin, garlic powder, salt, and pepper. Rub this spice mixture all over the chicken breasts.

    Cook the Chicken: Heat a skillet over medium heat and add 1 tablespoon of olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the skillet and let it rest for 5 minutes before slicing it into thin strips.

      Sauté the Pineapple: In the same skillet, add the diced pineapple and sauté for about 3-4 minutes until slightly caramelized and tender. Remove from heat.

        Assemble the Quesadillas: On one half of each tortilla, layer the shredded Monterey Jack cheese, sliced chicken, caramelized pineapple, cotija cheese (if using), and chopped cilantro. Fold the tortillas over to create a half-moon shape.

          Grill the Quesadillas: Spray the skillet with cooking spray or brush lightly with olive oil. Place the folded quesadillas in the skillet and cook for about 3-4 minutes on each side, until golden brown and the cheese has melted.

            Serve: Remove the quesadillas from the skillet and let them cool for a minute before slicing them into wedges. Serve warm with sour cream or salsa on the side.
