Grilled Chicken & Peach Kabobs

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 medium ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

3 tablespoons olive oil

3 tablespoons honey

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes before use)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together the olive oil, honey, balsamic vinegar, minced garlic, dried thyme, salt, and pepper.

      - Add the cubed chicken to the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

        Prepare the Skewers:

          - Thread the marinated chicken, peach wedges, red bell pepper, and red onion onto the skewers, alternating between the ingredients for a colorful presentation. Leave a little space between each piece to ensure even cooking.

            Preheat the Grill:

              - Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.

                Grill the Kabobs:

                  - Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked (internal temperature should reach 165°F or 75°C) and has nice grill marks. The peaches and veggies should be slightly charred and tender.

                    Serve:

                      - Remove the kabobs from the grill and let them rest for a few minutes. Serve warm with a drizzle of leftover marinade if desired or a sprinkle of fresh herbs for garnish.
