8 oz. penne pasta

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup shredded Parmesan cheese

1/4 cup Caesar dressing

Croutons, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to the package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Chicken: While the pasta is cooking, preheat your grill (or grill pan) to medium-high heat. Rub the chicken breasts with olive oil, and season with salt, pepper, garlic powder, and Italian seasoning.

      Grill the Chicken: Place the seasoned chicken on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill, let it rest for a few minutes, then slice into strips.

        Assemble the Salad: In a large mixing bowl, combine the cooked pasta, chopped romaine lettuce, cherry tomatoes, grilled chicken strips, and shredded Parmesan cheese.

          Dress the Salad: Drizzle the Caesar dressing over the salad mixture and toss gently until everything is evenly coated. Adjust seasoning if necessary.
