Ingredients

4 slices of sourdough bread

4 tablespoons of garlic herb butter (softened)

4 slices of sharp cheddar cheese

4 slices of crispy bacon

1 medium tomato, sliced

2 leaves of crisp romaine lettuce

Salt and pepper to taste

Optional: a drizzle of garlic aioli or spicy mayo

Instructions

Prepare the ingredients: Cook the bacon in a skillet over medium heat until crispy. Remove and let it drain on paper towels. Slice the tomato and wash the romaine lettuce.

Butter the bread: Spread 1 tablespoon of garlic herb butter on one side of each slice of sourdough bread.

Assemble the sandwich: Place 2 slices of bread, buttered side down, on a cutting board. Layer each with 2 slices of cheese, followed by a piece of lettuce, tomato slices, crispy bacon, a sprinkle of salt and pepper, and the final layer of 2 more slices of cheese. Top with the remaining slices of bread, buttered side up.

Grill the sandwich: Heat a skillet or frying pan over medium heat. Once hot, carefully place the assembled sandwich into the pan. Cook for 3-4 minutes or until the bottom is golden brown and the cheese begins to melt.

Flip carefully: Use a spatula to gently flip the sandwich over. Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.

Slice and serve: Remove the sandwich from the pan and let it sit for a minute. Slice it in half diagonally for that perfect presentation. If desired, drizzle with garlic aioli or spicy mayo before serving.
