2 slices sourdough bread

4 oz fresh mozzarella cheese, sliced

2 oz goat cheese, crumbled

1 cup baby spinach or arugula

1 medium tomato, sliced

3 tablespoons balsamic vinaigrette (store-bought or homemade)

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves (optional, for garnish)

Instructions
 

Prepare the Ingredients:

    Gather all the ingredients and prepare them. Slice the bread, mozzarella, and tomato, crumble the goat cheese, and rinse the baby spinach if needed.

      Mix the Greens:

        In a bowl, toss the baby spinach or arugula with 1 tablespoon of balsamic vinaigrette. Season lightly with salt and pepper.

          Assemble the Sandwich:

            On one slice of sourdough, layer half of the mozzarella cheese, followed by the vinaigrette-seasoned greens, sliced tomato, crumbled goat cheese, and finally the remaining mozzarella. Top with the second slice of sourdough.

              Grill the Sandwich:

                In a skillet or pan, heat 1 tablespoon of olive oil over medium heat. Once the oil is hot, carefully place the sandwich in the skillet. Cook for about 4-5 minutes, or until the bottom is golden brown and the cheese begins to melt.

                  Flip and Finish:

                    Add the remaining tablespoon of olive oil to the skillet, then carefully flip the sandwich. Cook the second side for another 4-5 minutes, pressing down lightly with a spatula.

                      Serve with Extras:

                        Once both sides are golden and the cheese is melted, remove the sandwich from the skillet. Drizzle the remaining balsamic vinaigrette on top, garnish with fresh basil if desired, and slice in half to serve.
