4 whole fish (such as sea bass or snapper), cleaned and scaled

4 tablespoons olive oil

2 tablespoons fresh lemon juice

4 cloves garlic, minced

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

1 tablespoon fresh parsley, chopped

Salt and black pepper, to taste

1 lemon, sliced into rounds

1 red onion, sliced into rings

Optional: fresh herbs (dill or thyme) for garnish

Prepare the Marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, parsley, salt, and black pepper until well combined.

    Marinate the Fish: Place the cleaned fish in a shallow dish or a large resealable plastic bag. Pour the marinade over the fish, ensuring it coats both the inside and outside. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become covered with ash.

        Prepare the Grill Rack: Lightly oil the grill grates with a paper towel dipped in oil to prevent sticking.

          Prepare for Grilling: Stuff each fish with lemon slices and a couple of red onion rings for added flavor and moisture.

            Grill the Fish: Place the fish directly on the grill grates. Grill for about 5-7 minutes on one side, then carefully flip using a spatula and grill for another 5-7 minutes on the other side. The fish is cooked when it flakes easily with a fork and is opaque throughout.

              Monitor and Serve: If desired, you can place lemon rounds and onion rings on the grill to caramelize slightly; this adds a nice touch! Once done, remove the fish from the grill and let it rest for a few moments.

                Garnish and Serve: Transfer the fish to a serving platter, garnish with extra fresh herbs, and serve immediately with additional lemon wedges on the side.
