1 large cucumber, diced

3 medium ripe tomatoes, diced

1 bell pepper (red or yellow), diced

1 red onion, thinly sliced

1 cup Kalamata olives, pitted

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

In a large salad bowl, combine the diced cucumber, tomatoes, bell pepper, and red onion.

    Add the Kalamata olives and crumbled feta cheese to the bowl.

      In a small mixing bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well blended.

        Drizzle the dressing over the salad mixture and gently toss to combine all the ingredients.

          Sprinkle the chopped parsley over the top for garnish.

            Let the salad sit for about 10 minutes to allow the flavors to meld, or serve immediately for a fresh crunch.
