Ingredients

For the Greek Chicken:

4 boneless, skinless chicken thighs

3 tablespoons olive oil

1 tablespoon lemon juice

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, peeled and grated

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon white vinegar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

For the Couscous:

1 cup couscous

1 1/4 cups chicken broth (or vegetable broth)

1 tablespoon olive oil

1/4 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken:

    - In a mixing bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, pepper, and smoked paprika.

      - Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

        Prepare the Tzatziki Sauce:

          - In a medium bowl, mix together the Greek yogurt, grated cucumber (make sure to drain excess moisture), minced garlic, olive oil, white vinegar, and fresh dill.

            - Season with salt and pepper to taste. Cover and refrigerate to allow the flavors to meld.

              Cook the Couscous:

                - In a medium saucepan, bring the chicken broth and olive oil to a boil. Add salt.

                  - Stir in the couscous, remove from heat, cover, and let it sit for about 5 minutes or until the couscous absorbs the liquid. Fluff with a fork and set aside.

                    Grill the Chicken:

                      - Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and place it on the grill.

                        - Cook for 5-7 minutes on each side or until the chicken is fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for about 5 minutes before slicing.

                          Serve:

                            - On a plate, serve a generous scoop of couscous topped with the sliced Greek chicken. Drizzle with tzatziki sauce over the chicken and couscous.

                              - Garnish with fresh parsley for a pop of color.
