Ingredients
  

2 boneless, skinless chicken breasts

1 teaspoon olive oil

1 teaspoon oregano

Salt and pepper to taste

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup Kalamata olives, pitted and halved

½ cup feta cheese, crumbled

¼ cup red wine vinegar

¼ cup olive oil

1 teaspoon Dijon mustard

1 teaspoon honey

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with olive oil, oregano, salt, and pepper. Grill the chicken for about 6-7 minutes on each side, until cooked through and juices run clear. Remove from heat and allow to rest for 5 minutes before slicing.

    Make the Dressing: In a small bowl, whisk together red wine vinegar, olive oil, Dijon mustard, honey, salt, and pepper until well combined and emulsified. Adjust seasoning to taste if necessary.

      Assemble the Salad: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and Kalamata olives. Toss gently to mix the ingredients.

        Add Chicken and Dressing: Slice the grilled chicken and place it on top of the salad mixture. Drizzle the dressing over the salad and toss gently once more to combine.

          Finish with Feta and Parsley: Sprinkle crumbled feta cheese over the top and garnish with fresh parsley. Serve immediately.
