Greek Chicken Gyros – Homemade Tzatziki Included!

For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

3 cloves garlic, minced

2 tablespoons olive oil

Juice of 1 lemon

1 tablespoon red wine vinegar

1 tablespoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon red wine vinegar

Salt and pepper to taste

For Assembly:

4 pita bread or flatbreads

1 cup lettuce, chopped

1 medium tomato, sliced

½ red onion, thinly sliced

Feta cheese, crumbled (optional)

Kalamata olives (optional)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine minced garlic, olive oil, lemon juice, red wine vinegar, oregano, cumin, smoked paprika, salt, and pepper. Add the chicken thighs and coat well with the marinade. Cover and let marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Tzatziki: In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, dill, red wine vinegar, salt, and pepper. Mix well and adjust seasoning to taste. Cover and refrigerate until ready to serve.

      Cook the Chicken: Preheat your grill or skillet over medium-high heat. Remove chicken from the marinade and discard any excess marinade. Grill the chicken for about 5-7 minutes on each side, or until it reaches an internal temperature of 165°F (75°C) and is cooked through. Once cooked, let the chicken rest for a few minutes before slicing it into thin strips.

        Warm the Pita Bread: If you prefer warm pita, you can lightly toast them on the grill or wrap them in foil and warm them in the oven for about 5 minutes at 350°F (175°C).

          Assemble the Gyros: Lay the warm pita flat. Place a generous amount of chopped lettuce, sliced tomato, sliced red onion, and sliced chicken on top. Finish with a generous drizzle of tzatziki sauce and sprinkle with feta cheese and olives if desired.

            Wrap and Serve: Fold the pita over the fillings to enclose everything. Serve immediately with extra tzatziki on the side for dipping!
