Golden Parmesan Crusted Mushroom Burgers

4 large Portobello mushrooms, stems removed

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

2 large eggs, beaten

1 tablespoon olive oil

4 burger buns (your choice)

Fresh arugula or spinach (for serving)

Sliced tomatoes (for serving)

Optional: avocado slices and your favorite sauce (aioli or pesto recommended)

Instructions
 

Prepare the Mushrooms: Preheat the oven to 375°F (190°C). Clean the Portobello mushrooms with a damp cloth and gently remove the stems.

    Make the Coating: In a medium bowl, combine the Parmesan cheese, breadcrumbs, minced garlic, oregano, thyme, onion powder, salt, and black pepper. Mix until well combined.

      Coat the Mushrooms: Dip each mushroom cap into the beaten eggs, allowing any excess to drip off. Then, press the mushroom into the Parmesan breadcrumb mixture, coating the top side generously.

        Prepare for Baking: Line a baking sheet with parchment paper. Place the coated mushrooms on the sheet, crust side up. Drizzle olive oil over each mushroom to help them crisp up in the oven.

          Bake the Mushrooms: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the mushrooms are tender.

            Toast the Buns: While the mushrooms are baking, you can toast the burger buns on a skillet or in the oven until lightly browned.

              Assemble the Burgers: Once the mushrooms are done, remove them from the oven. Place each mushroom on the bottom half of a toasted bun. Top with a handful of fresh arugula or spinach and slices of tomato. If you’re adding avocado and sauce, now’s the time to layer those on!

                Serve: Crown your mushroom burger with the top half of the bun and serve immediately while hot and crispy!
