3 cups old-fashioned rolled oats

1 cup pecan halves, roughly chopped

1/2 cup shredded unsweetened coconut

1/2 cup sunflower seeds

1/2 cup maple syrup

1/4 cup melted coconut oil (or vegetable oil)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup dried cranberries or raisins (optional)

Instructions
 

Preheat Your Oven: Preheat the oven to 350°F (175°C).

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped pecans, shredded coconut, sunflower seeds, cinnamon, and sea salt. Stir until well mixed.

      Mix Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well blended.

        Combine Wet and Dry: Pour the wet ingredients over the dry ingredients. Mix thoroughly, ensuring all dry ingredients are coated with the wet mixture.

          Spread on Baking Sheet: Line a large baking sheet with parchment paper. Spread the granola mixture evenly across the sheet, pressing it down slightly to help it clump together.

            Bake: Place the baking sheet in the preheated oven and bake for about 25-30 minutes, or until the granola is golden brown. Stir halfway through baking to ensure even toasting.

              Cool and Add Dried Fruit: Remove the granola from the oven and allow it to cool completely on the baking sheet. Once cooled, stir in the dried cranberries or raisins, if desired.

                Store: Once cooled, break the granola into clusters. Store in an airtight container at room temperature for up to two weeks.
