When it comes to preparing the perfect Sweet & Savory Glazed Apricot Chicken, selecting the right skillet is crucial. A heavy-duty cast-iron skillet is ideal for this recipe, as it retains heat exceptionally well, ensuring an even sear on the chicken. Alternatively, a stainless steel skillet can work if it has a thick base to prevent hot spots. The skillet should be oven-safe, allowing for a smooth transition from stovetop to oven. This versatility is essential as it allows you to achieve a crispy exterior while ensuring the chicken cooks through evenly.

Ingredients

4 boneless, skinless chicken breasts

1 cup apricot preserves

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated (or 1/4 teaspoon ground ginger)

1/4 teaspoon black pepper

1 tablespoon olive oil

1 teaspoon sesame seeds (for garnish)

Fresh chopped parsley (for garnish, optional)

Instructions

Marinate the Chicken:

    - In a bowl, whisk together the apricot preserves, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, grated ginger, and black pepper.

      - Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken.

        - Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).

          Preheat the Oven:

            - Preheat your oven to 375°F (190°C) while the chicken marinates.

              Sear the Chicken:

                - In a large oven-safe skillet, heat the olive oil over medium-high heat.

                  - Remove the chicken from the marinade (reserve the marinade for later), and sear the chicken breasts for about 3-4 minutes per side, until golden brown.

                    Add Marinade and Bake:

                      - Pour the reserved marinade over the seared chicken and bring it to a gentle simmer.

                        - Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).

                          Glaze and Finish:

                            - Once cooked, remove the skillet from the oven.

                              - Turn the broiler on, and place the chicken under the broiler for an additional 2-3 minutes to caramelize the glaze further (watch closely to avoid burning).

                                Serve:

                                  - Remove from the oven, let the chicken rest for a few minutes.

                                    - To serve, sprinkle with sesame seeds and optional fresh chopped parsley for added color and flavor.

                                      Enjoy:

                                        - Serve the glazed apricot chicken over rice or with steamed vegetables to enjoy the delightful flavors!
