4 large Yukon Gold potatoes, peeled and diced

1 medium onion, finely chopped

3 garlic cloves, minced

4 cups vegetable broth

1 cup heavy cream

1 tablespoon butter

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and pepper, to taste

1/2 cup diced carrots

1/2 cup diced celery

1/4 cup fresh chives, chopped (for garnish)

2 tablespoons apple cider vinegar (optional)

Instructions
 

Sauté the Vegetables: In a large pot, melt the butter over medium heat. Add the chopped onions, garlic, carrots, and celery. Sauté for about 5-7 minutes until the onions are translucent and the veggies are slightly tender.

    Add Potatoes and Broth: Stir in the diced Yukon Gold potatoes, smoked paprika, thyme, salt, and pepper. Pour in the vegetable broth and bring to a boil. Once boiling, reduce heat to low and let simmer for about 20-25 minutes, or until the potatoes are fork-tender.

      Blend the Soup: Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth, then return it to the pot.

        Incorporate the Cream: Stir in the heavy cream and adjust the seasoning with more salt, pepper, and apple cider vinegar if using. Let it simmer on low heat for an additional 5-10 minutes, allowing the flavors to meld together.

          Serve: Ladle the soup into bowls and garnish with freshly chopped chives. Pair with crusty bread for a complete meal!
