1 pound large sea scallops, patted dry

3 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon fresh parsley, chopped

Salt and pepper, to taste

Lemon wedges, for serving

Instructions
 

Begin by patting the scallops dry with paper towels to ensure a good sear. Season both sides with salt and pepper.

    In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat until melted and bubbly.

      Carefully add the scallops to the skillet, making sure not to overcrowd the pan. Cook for about 2-3 minutes until a golden crust forms. Flip them gently and cook for another 2 minutes on the other side until they are opaque and just cooked through. Remove scallops from the pan and transfer to a plate.

        In the same skillet, lower the heat to medium and add the remaining olive oil and butter. Once melted, add the minced garlic and sauté for about 30 seconds, until fragrant.

          Stir in the lemon zest and lemon juice, mixing well to create a flavorful sauce. Cook for an additional minute to let the sauce thicken slightly.

            Add the cooked scallops back to the skillet, tossing them gently in the garlic lemon butter sauce until well-coated.

              Remove from heat and garnish with fresh parsley. Serve immediately with lemon wedges on the side.
