2 pounds fresh mussels, cleaned and debearded

4 tablespoons unsalted butter

4 cloves garlic, minced

1 small shallot, finely chopped

1/2 cup dry white wine (like Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

Salt and freshly cracked black pepper to taste

Crusty bread, for serving (optional)

Instructions
 

Prep the Mussels: Rinse the mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped gently.

    Sauté Aromatics: In a large pot or deep skillet, melt the butter over medium heat. Add the minced garlic and chopped shallot, sautéing for about 2-3 minutes until they are fragrant and the shallot is translucent.

      Deglaze with Wine: Pour in the white wine and scrape the bottom of the pot to release any flavorful bits stuck to it. Allow the wine to simmer for 2-3 minutes to slightly reduce.

        Add Mussels: Add the cleaned mussels to the pot and cover with a lid. Allow them to steam for about 5-7 minutes, shaking the pot occasionally, until the mussels have opened up.

          Finish with Lemon and Herbs: Once the mussels are fully opened, squeeze in the lemon juice, sprinkle over the lemon zest, and stir in the fresh parsley and red pepper flakes, if using. Season with salt and black pepper to taste.
