1.5 to 2 pounds pork tenderloin

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)

2 tablespoons fresh thyme leaves (or 1 tablespoon dried)

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Dijon mustard

Zest of 1 lemon

Juice of 1 lemon

Optional: Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine the minced garlic, chopped rosemary, thyme, parsley, olive oil, salt, black pepper, Dijon mustard, lemon zest, and lemon juice. Mix well to create a marinade.

      Marinate the Pork: Place the pork tenderloin in a large resealable plastic bag or shallow dish. Pour the marinade over the tenderloin, ensuring it is well-coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for deeper flavor.

        Sear the Pork: Heat a skillet over medium-high heat. Remove the pork from the marinade (reserving the marinade) and add it to the hot skillet. Sear on all sides for about 3-4 minutes until it develops a nice golden-brown crust.

          Transfer to Oven: After searing, place the pork tenderloin in a roasting pan or oven-safe dish. Drizzle the reserved marinade over the top of the pork.

            Roast the Pork: Transfer the dish to the preheated oven and roast for 20-25 minutes or until the internal temperature of the pork reaches 145°F (63°C). To ensure even cooking, consider flipping the pork halfway through the roasting process.
