Garlic Butter Shrimp Scampi Lasagna

12 lasagna noodles

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup dry white wine

1 lemon (zest and juice)

1 cup heavy cream

2 cups ricotta cheese

1 teaspoon dried Italian herbs

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Start by preheating your oven to 375°F (190°C).

    Cook Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a clean surface.

      Prepare Shrimp: In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

        Add Wine and Shrimp: Pour in the white wine and bring to a simmer. Add the shrimp, lemon zest, and lemon juice. Cook for about 3-4 minutes until the shrimp turn pink. Remove from heat and stir in the heavy cream. Season with salt and pepper to taste.

          Mix Cheese Filling: In a separate bowl, combine ricotta cheese, dried Italian herbs, and half of the Parmesan cheese. Season with salt and pepper.

            Assemble Lasagna: In a greased 9x13 inch baking dish, spread a thin layer of the shrimp mixture on the bottom. Place three lasagna noodles over the shrimp. Spread half of the ricotta mixture on top, followed by a layer of the shrimp mixture, and sprinkle with mozzarella cheese. Repeat the layers: noodles, ricotta mixture, shrimp mixture, and mozzarella. Finish with a final layer of noodles, the remaining shrimp mixture, and top with the rest of the mozzarella and the remaining Parmesan cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden and bubbly.

                Garnish and Serve: Once out of the oven, let the lasagna cool for about 10 minutes. Garnish with fresh chopped parsley before slicing and serving.
