Ingredients

4 medium-sized Yukon Gold potatoes (about 6-8 ounces each)

1/2 cup unsalted butter (1 stick)

6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme leaves, chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (optional)

Chopped fresh parsley for garnish

Lemon wedges for serving (optional)

Instructions

Prepare the Potatoes: Preheat your oven to 425°F (220°C). Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a kitchen towel.

Slice the Potatoes: Use a sharp knife to make thin slices along the length of each potato, about 1/8 inch apart, being careful not to cut all the way through. A useful trick is to place the potato between two wooden chopsticks or the handles of two wooden spoons; this prevents slicing all the way through.

Make the Garlic Butter: In a small saucepan, melt the butter over low heat. Add the minced garlic, chopped rosemary, and thyme. Cook for about 2-3 minutes or until fragrant, stirring constantly to avoid burning the garlic. Remove from heat and let it cool slightly.

Coat the Potatoes: Place the sliced potatoes in a baking dish. Using a brush or spoon, generously drizzle half of the garlic butter mixture over the potatoes, making sure to get it into the crevices. Sprinkle with sea salt and black pepper.

Roast the Potatoes: Cover the baking dish with aluminum foil and roast in the preheated oven for 30 minutes. This helps to steam the potatoes, making them fluffy on the inside.

Finish and Add Cheese: After 30 minutes, remove the foil and drizzle the remaining garlic butter mixture over the potatoes. If using, sprinkle the grated Parmesan cheese on top. Return the potatoes to the oven and bake for an additional 25-30 minutes, or until they are golden and crispy on the outside and tender on the inside.

Garnish and Serve: Once cooked, remove from the oven and let them cool slightly. Garnish with freshly chopped parsley and serve with lemon wedges on the side for a bright finish.
