4 medium-sized Russet potatoes

1/2 cup unsalted butter (1 stick), melted

6 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh parsley, finely chopped

Salt, to taste

Freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese (optional)

Lemon wedges, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Scrub the potatoes under running water to remove any dirt. Pat them dry with a clean kitchen towel. Carefully make horizontal slices about 1/8 inch apart across each potato, stopping about 1/4 inch from the bottom so the potato remains intact.

      Make Garlic Butter: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, salt, and black pepper. Mix well to incorporate all flavors.

        Apply the Garlic Butter: Place the potatoes on a baking sheet lined with parchment paper. Use a pastry brush or a spoon to generously brush the garlic butter mixture between the slices of each potato and all over the exterior.

          Bake the Potatoes: Roast the potatoes in the preheated oven for 45-55 minutes, or until they are crispy on the outside and tender on the inside. Halfway through baking, brush the potatoes with any remaining garlic butter to enhance the flavor and crispiness.

            Add Cheese (Optional): If you’d like a cheesy finish, sprinkle the grated Parmesan cheese over the potatoes during the last 10 minutes of baking, allowing it to melt and get golden.

              Garnish & Serve: Once cooked, remove the potatoes from the oven and let them cool for a few minutes. Sprinkle with fresh parsley for a pop of color and serve with lemon wedges on the side for a zesty kick.
