12 oz (340g) fettuccine pasta

2 tbsp olive oil

2 large chicken breasts, diced

4 cloves garlic, minced

1 cup chicken broth

1/2 cup unsalted butter (1 stick)

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp salt

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, seasoned with salt and pepper, and cook until browned and cooked through, approximately 6-8 minutes. Remove chicken from the skillet and set aside.

      Make Garlic Butter Sauce: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant (be careful not to burn it). Then, add the butter and stir until melted.

        Add Liquid Ingredients: Pour in the chicken broth and heavy cream. Stir well, allowing the mixture to come to a simmer. Cook for 3-4 minutes, then gradually whisk in the grated Parmesan cheese until smooth and creamy.

          Combine Everything: Return the cooked chicken to the skillet with the sauce. Add the drained pasta, tossing to combine. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.
