Ingredients

20 large jumbo pasta shells

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Cook Pasta: In a large pot of boiling salted water, cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool slightly.

Prepare Chicken Filling: In a large bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Mix until well combined. Season with salt and pepper to taste.

Make Garlic Butter Sauce: In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Pour in the heavy cream and stir to combine. Bring to a gentle simmer.

Add Seasoning: Stir in the Italian seasoning and the remaining Parmesan cheese. Allow to cook for another 2-3 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper to taste.

Stuff the Shells: Carefully fill each cooked shell with the chicken and cheese mixture. Place each stuffed shell into a greased 9x13 inch baking dish.

Pour Sauce Over Shells: Once all the shells are filled, pour the garlic butter sauce evenly over the top of the stuffed shells. Sprinkle with the remaining mozzarella cheese.

Bake: Cover the dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

Garnish & Serve: Remove from the oven and let it cool slightly. Garnish with chopped fresh parsley before serving.
