Ingredients

2 ripe peaches, halved and pitted

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1/4 cup granola or crushed nuts (for topping)

Popsicle sticks or plastic ring molds

Instructions

Prepare the Peaches: Begin by halving the peaches and removing the pits. If desired, you can scoop out a bit more flesh to create a larger cavity for the yogurt filling.

Make the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon. Stir until well combined and creamy.

Fill the Peaches: Carefully spoon the yogurt mixture into each peach half, filling them generously but not overflowing.

Add Toppings: Sprinkle a bit of granola or crushed nuts on top of the yogurt layer for added texture and flavor.

Insert Sticks: Carefully insert a popsicle stick into the center of each yogurt-filled peach half, making sure it sits upright and is secure.

Freeze: Place the stuffed peaches on a tray or plate (with the sticks standing upright) and transfer to the freezer. Allow them to freeze for at least 4-6 hours, or until completely solid.

Serve: Once frozen, gently remove the peach ring pops from their molds (if you used plastic molds) and enjoy immediately! You can slice them for easier handling or enjoy whole as a refreshing treat.
