2 cups fresh strawberries, hulled and roughly chopped

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 ½ cups Greek yogurt (plain or vanilla-flavored)

½ cup granola (for crunch)

2 tablespoons powdered sugar (optional, for sweetness)

Popsicle molds (with sticks)

Instructions
 

Prepare the Strawberries: In a medium bowl, combine the chopped strawberries with honey and vanilla extract. Gently toss to combine and let sit for about 10-15 minutes to release some juices.

    Blend Yogurt Mixture: In a blender, mix the Greek yogurt and powdered sugar (if using) until smooth and creamy. Taste and adjust sweetness if needed.

      Layering: Start by spooning a layer of the yogurt mixture at the bottom of each popsicle mold, about 1/3 filled.

        Add Strawberries: Spoon a layer of the strawberry mixture over the yogurt layer, filling the mold about halfway.

          Granola Crunch: Sprinkle a thin layer of granola on top of the strawberries. This adds a delightful crunch to your pops!

            Finish Layering: Top off the molds with another layer of the yogurt mixture until just below the top.

              Insert Sticks: Gently insert the popsicle sticks into each mold, making sure they’re centered.

                Freeze: Place the filled molds in the freezer for at least 4-6 hours or until completely frozen.
