1 cup rolled oats

1/2 cup natural peanut butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/4 cup mini chocolate chips (optional)

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

A pinch of salt

1/4 cup chopped nuts (optional, such as almonds or walnuts)

Instructions
 

In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Mix well to ensure even distribution of the dry ingredients.

    In a separate bowl, mix the natural peanut butter, honey (or maple syrup), and vanilla extract. Stir until you have a smooth, cohesive mixture.

      Pour the wet peanut butter mixture into the bowl of dry ingredients. Stir thoroughly until everything is well combined. If using, fold in the mini chocolate chips and chopped nuts at this stage.

        Using your hands or a small cookie scoop, take portions of the mixture and roll them into bite-sized balls, approximately 1 inch in diameter. Place the rolled bites onto a parchment-lined baking sheet.

          Once all the mixture has been shaped into bites, place the baking sheet in the freezer. Allow the bites to freeze for at least 1-2 hours until they are firm.

            After freezing, transfer the peanut butter oat bites into a resealable plastic bag or airtight container, and store them in the freezer. They will keep for up to 2 months.
