2 cups fresh or frozen peaches, diced

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 cups Greek yogurt (plain or vanilla flavored)

1/4 teaspoon ground cinnamon (optional)

Pinch of salt

Popsicle molds and sticks

Prepare the Peaches: If using fresh peaches, wash, peel, and dice them into small pieces. If using frozen peaches, let them thaw slightly for easier blending.

    Make the Peach Mixture: In a blender or food processor, combine the diced peaches, honey (or maple syrup), lemon juice, vanilla extract, cinnamon (if using), and a pinch of salt. Blend until smooth, leaving a few small chunks of peach for texture.

      Combine with Yogurt: In a mixing bowl, combine the blended peach mixture with Greek yogurt. Stir until fully incorporated, ensuring a nice peachy flavor throughout the yogurt.

        Pour into Molds: Carefully pour the peach yogurt mixture into popsicle molds, filling them about 3/4 of the way to allow for expansion. Insert sticks into the center of each mold.

          Freeze: Place the filled molds into the freezer for at least 4 to 6 hours, or until the pops are completely frozen solid.

            Unmold and Serve: To remove the popsicles, run the molds under warm water for a few seconds to loosen them. Gently pull on the sticks to remove the popsicles. Enjoy the refreshing treat!

              Storage: Any leftover pops can be wrapped in plastic wrap or placed in an airtight container and stored in the freezer for up to 2 weeks.
