Frozen Blueberry Muffin Bites

1 cup all-purpose flour

1/2 cup almond flour

1/2 cup rolled oats

1/2 cup plain Greek yogurt

1/3 cup honey or maple syrup

1 large egg

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

Optional: 1/4 cup chopped walnuts or pecans

Optional: Zest of 1 lemon

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, oats, baking powder, baking soda, and salt. If you're adding lemon zest, incorporate it into the dry mixture to distribute the flavor evenly.

      Mix Wet Ingredients: In a separate bowl, mix together the Greek yogurt, honey (or maple syrup), egg, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.

          Fold in Blueberries: Gently fold in the blueberries (and nuts, if using), ensuring they are evenly distributed without smashing them.

            Fill Muffin Tin: Spoon the batter into the mini muffin tin, filling each cavity about 3/4 of the way full. This helps the muffins rise appropriately without overflowing.

              Bake: Place the muffin tin in the preheated oven and bake for 12-15 minutes or until the tops are golden and a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove the muffin bites from the oven and allow them to cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely.

                  Freeze: If preparing the muffin bites for freezing, once completely cool, place the muffin bites in a single layer on a baking sheet and freeze for 1-2 hours. Once frozen solid, transfer them to an airtight container or freezer bag.
