1 cup cornmeal

1/2 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1 cup sweet corn kernels (fresh, frozen, or canned)

1/2 cup diced bell pepper (red or green for color)

1/4 cup chopped green onions

1/2 teaspoon smoked paprika (optional for added flavor)

Oil for frying (vegetable or canola)

Instructions
 

In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt. Whisk together until blended.

    In a separate bowl, whisk the buttermilk and eggs until smooth. Gradually pour this mixture into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

      Fold in the corn kernels, diced bell pepper, green onions, and smoked paprika (if using). The batter should be thick and lumpy.

        Heat about 1-2 inches of oil in a large, deep skillet or pot over medium heat until it reaches 350°F (175°C).

          Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil, being cautious not to crowd the pan. Fry the fritters for 2-3 minutes on each side or until they are golden brown and crispy.

            Using a slotted spoon, transfer the fritters to a paper towel-lined plate to drain excess oil. Sprinkle lightly with salt while still hot.

              Serve warm with your favorite dipping sauce or alongside a light salad.
