Fried Cheese Stuffed Doritos

1 bag (10 ounces) Nacho Cheese Doritos

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably seasoned)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Oil for frying (vegetable or canola)

Optional: Fresh cilantro or green onions for garnish

Prep the Cheese Mixture: In a mixing bowl, combine the shredded cheddar and mozzarella cheese. Mix well and set aside.

    Crush the Doritos: Using a rolling pin or a food processor, crush the Doritos into fine crumbs. Set aside half of the crushed Doritos for coating later.

      Prepare the Breading Station: Set up three bowls for the breading process:

        - In the first bowl, place the flour seasoned with salt, garlic powder, onion powder, paprika, and black pepper.

          - In the second bowl, beat the eggs until smooth.

            - In the third bowl, place the breadcrumbs mixed with the remaining crushed Doritos.

              Stuff the Doritos: Take a few Doritos, and melt a small amount of shredded cheese in the microwave (about 30 seconds). Once slightly cooled, carefully spoon a small amount of the cheese mixture onto the center of a Dorito. Place another Dorito on top to create a “sandwich.” Gently press edges to seal the cheese inside. Repeat this process until all cheese and Doritos are used.

                Coat the Stuffed Doritos: Dip each stuffed Dorito sandwich first into the flour mixture, then into the beaten eggs, and lastly into the breadcrumb-Dorito mixture, pressing gently to ensure that the coating adheres well.

                  Heat the Oil: In a large saucepan or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into the oil; if it bubbles and sizzles, it's ready.

                    Fry the Stuffed Doritos: Carefully add the coated stuffed Doritos to the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side. Use a slotted spoon to remove them from the oil and transfer them to a plate lined with paper towels to drain excess oil.

                      Serve: Garnish with chopped cilantro or green onions if desired. Serve hot with your favorite dipping sauces, such as ranch, salsa, or guacamole.
