1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup buttermilk (or milk with 1 tsp vinegar added)

1/4 cup unsalted butter, melted

1 teaspoon vanilla extract

Prepare the Peaches: In a large bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Gently toss until the peaches are well coated. Let the mixture sit for about 15-20 minutes to allow the juices to release.

    Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

      Assemble the Peach Filling: Once the peaches have rested, pour them into the prepared baking dish, spreading them evenly.
