1 cup grated zucchini (about 1 medium zucchini)

1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 teaspoon baking soda

¼ teaspoon baking powder

½ teaspoon salt

½ cup granulated sugar

½ cup brown sugar, packed

2 large eggs

½ cup vegetable oil

1 teaspoon vanilla extract

½ cup semi-sweet chocolate chips (plus extra for topping)

½ cup chopped walnuts or pecans (optional)

1 teaspoon ground cinnamon (optional)

Instructions
 

Prepare the Zucchini: Start by washing and grating your zucchini. If the zucchini is particularly watery, press it gently in a clean kitchen towel to remove excess moisture. Set aside.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with a bit of oil or line it with parchment paper for easy removal.

      Combine Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, and cinnamon until well blended. Set aside.

        Mix Wet Ingredients: In a large bowl, combine the granulated sugar, brown sugar, and eggs. Whisk until creamy. Add the vegetable oil and vanilla extract, mixing until combined.

          Incorporate Zucchini: Fold the grated zucchini into the wet mixture until evenly distributed.

            Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. The batter should be thick and slightly lumpy.
