1 lb beef stew meat, cut into 1-inch cubes

3 large onions, thinly sliced

2 cloves garlic, minced

3 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons unsalted butter

8 oz egg noodles

1 cup grated Gruyère cheese

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot. Sear until browned on all sides. Remove the beef and set aside.

    Cook the Onions: In the same pot, add the remaining tablespoon of olive oil and the butter. Add the sliced onions, season with a pinch of salt, and cook over medium-low heat, stirring frequently, until the onions are caramelized and golden brown (about 15-20 minutes).

      Add Garlic and Seasonings: Once the onions are caramelized, add the minced garlic, dried thyme, and paprika. Stir for 1-2 minutes until the garlic is fragrant.

        Combine Ingredients: Return the seared beef to the pot. Pour in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, cover, and let it cook for about 1 hour, or until the beef is tender.

          Cook the Noodles: Meanwhile, bring a pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until al dente. Drain and set aside.
