1/2 cup bell pepper, diced (any color)

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 cup shredded cheddar cheese (optional)

Fresh herbs (like chives or parsley) for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or line with silicone muffin cups.

    Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them until well combined. This will help to incorporate air, making the muffins fluffier.

      Add Cottage Cheese: Stir in the cottage cheese until fully integrated into the egg mixture. The cottage cheese will add a creamy texture and boost the protein content.
